Christmas is synonymous with plum cake. Usually made with dried raisins, prunes, currants, and sultanas, plum cakes make their way to every grocery store and supermarket in December. 

But, let’s be honest; besides the whole nostalgic factor associated with these brown, fruity cakes, the plum cakes available in India are sugary and not as great in taste. 

With this in mind, YS Life reached out to Chef Aditi Handa, Founder of The Baker’s Dozen, to share with us a few bake-at-home cake options to replace the usual store-bought plum cake this Christmas. 

Banana Bread Cakesicles

Want to relive your childhood memories this Christmas? Aditi shares the recipe for cakesicles (think popsicles, but with cake!), using leftover banana bread or any other cake.

List of ingredients: 

  • Cream cheese: 1 tbsp
  • White chocolate: a bowl, melted
  • Melted chocolate 
  • Sprinkles 
  • A loaf of banana bread
  • Ice-cream sticks 
  • Popsicle mould tray 

Procedure: 

Step 1: Take a bowl, crumble the banana bread, mix it well with the cream cheese, spread it evenly in a popsicle mould tray, add a layer of melted white chocolate, and freeze it.

Step 2: Top it with melted chocolate and sprinkles.

Mango Cheesecake

Everybody loves a good cheesecake, and what’s better than a cheesecake? One bursting with fresh and sweet flavours and requires no baking! 

List of ingredients: 

  • Butter cookies: 1 pack 
  • Butter: 6 tbsp
  • Cream cheese: 1 bowl 
  • Sugar: 2 tbsp 
  • Mango pulp: 1 cup 
  • Whipped cream: 2 bowls 

Procedure:

Step 1: Take the butter cookies in a transparent pack and crush it with the rolling pin

Step 2: Add butter to the crushed cookies

Step 3: Mix it well, put it into the mould, and press it so that it sets well

Step 4: Keep the mould in the fridge for 15 mins. Now, add 2 tbsp sugar to the cream cheese along with the mango pulp. 

Step 5: Whisk the whipped cream and add it to the mango pulp and gently fold it. Pour this mixture into the mould and spread it evenly. 

Step 6: Refrigerate for 30 mins and de-mould it. Garnish it with cut mango slices, and the cheesecake is ready to be served.

Sourdough Pastries

Discover the distinct flavour of blueberry and cranberry sourdough in a cake format—a must-try for all dessert enthusiasts.

Ingredients:

  • A cranberry and blueberry sourdough 
  • Sugar syrup
  • Whipped cream 
  • Fresh strawberries 

Procedure:

Step 1: Cut the sides of the sourdough and cut it into three equal slices.

Step 2: Apply sugar syrup to each slice and then cover it with whipped cream evenly. Follow this process until you get a good height for the pastry. Top it with freshly sliced strawberries and enjoy!
